Lobster Bake from the Cape

Ingredients

  • 2 small red potatoes
  • 1 ear of corn, outer most husks shucked
  • small onions peeled and halved
  • 1 1 1/4 pound lobsters
  • 1/4 pound clams
  • melted or drawn butter
  • (seaweed optional)

Instructions

  1. Individually wrap potatoes and onions in aluminum foil and place on top
  2. of the seaweed. Place corn on top of the potatoes and onions. Place
  3. lobsters on the potatoes and onions. Place the clams on top of the
  4. lobsters. Cover the whole bake with aluminum foil weighted down with
  5. bricks. Cook for 45 to 60 minutes, keeping the fire stoked. Test for
  6. doneness by cracking a lobster claw
