1 (9-inch) pie shell 8 ounces (1 cup) cooked crabmeat 2 tablespoons chopped fresh chives 2 large eggs, plus 2 large egg yolks

3/4 cup whole milk 3/4 cup heavy cream 1/2 teaspoon salt 1/2 teaspoon ground white pepper 2 tablespoons dry sherry Pinch cayenne pepper

Preheat oven to 375 degrees. Toss crabmeat with chopped chives. Arrange evenly over bottom of pie shell and set shell on oven rack. Whisk all remaining ingredients in a medium bowl. Pour in custard mixture. Bake until lightly brown, until a knife inserted in the center comes out clean, 30 to 35 minutes. |
