| Ingredients: |
3 cups espresso or strong black coffee 3 Tbsp. Kahluha or coffee flavored liquor 2 Eggs - separated |
3 Tbsp. sugar 8oz. Marscapone cheese 1 Cup whipping cream - whipped 16 large sponge fingers 2 Tbsp. dark cocoa powder

Instructions: |
1. Mix together the coffee and Kahluha in a bowl and set aside. Using electric mixer, beat the egg yolks and sugar in a bowl for about 3 minutes or until thick. Add marscapone and mix until combined. Transfer to a large bowl and fold in the cream.
2. Beat the egg whites until soft peaks form and fold into the cream mixture.
3. Dip half of the sponge fingers into the coffee mixture and drain off any excess coffee, arrange in the bottom of a 9"x9" square ceramic dish or similiar. Spread half the cream mixture over the sponge fingers.
4. Dip the remaining sponge fingers into the coffe mixture and repeat layers. Smooth the surface with a spatula and dust with the cocoa powder. Refrigerate for at least 2 hours or until firm. |

| If time allows, Tiramisu is best made a day in advance to let flavors develop. Keep refrigerated until ready to serve. |
