| Ingredients: |
1 head of cabbage - chopped 1 large onion - chopped Olive oil 5-7 cloves garlic - chopped 1 28oz can diced tomatoes |
1 lb of boneless pork salt and pepper coriander seeds beef boullion |
| Cooking
Instructions: |
Rinse pork under cold water, pat dry and season both sides with salt and pepper, cut into 2 inch cubes. Heat a large stew pot with oil when hot add pork. Cook until browned on all sides. Remove pork. Add a little more oil to pot and add the cabbage and onion, let the cabbage and onion cook for about 10-15 minutes then add the chopped garlic. Saute for approx 10 minutes and add the can of tomatoes, including juice and corriander. Add pork and let simmer, season to taste with salt and pepper. ( If you have a crock pot at this point put the stew in crock pot and let simmer until the cabbage is cooked through about and hour or so. If you don't have a crock pot simmer in stew pot for about an hour or so stirring occasionally.) Taste throughout cooking and if needed add about 1 cup of beef boullion or water. When cabbage is soft stew is completed.
